Balsamic Chicken and Butter Bean Mash

After a long day at work, the last thing you want is to spend hours in the kitchen. This quick, delicious, and nourishing meal is the perfect solution! Simply prep the marinade in the morning, let the chicken soak up all the flavours while you’re out, and when you get home, all that’s left to do is pop it in the oven, prep the veg, and whip up the mash. Easy, stress-free, and packed with goodness!

This meal is not only filling and satisfying, but it also provides a great balance of protein, fibre, and slow-release carbohydrates to keep your energy levels steady. The butter beans add fibre and gut-friendly benefits, while the green veggies provide essential nutrients to support overall health.

Ingredients:

  • 2 chicken breasts
  • 1/3 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 3 cloves of garlic, crushed
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 2 400g tins of butter beans
  • 1 tbsp ghee, butter or extra virgin olive oil
  • 150ml chicken stock
  • Juice of 1/2 lemon
  • 2 tsp fresh thyme
  • Salt and Pepper

Steps:

  1. Heat the oven to 180 degrees fan oven.
  2. Mix together the extra virgin olive oil, balsamic vinegar, 2 cloves of garlic, dried thyme, basil and oregano and add to an oven proof dish.
  3. Add chicken breasts and coat in the marinade.
  4. Cook the chicken in the oven until cooked, around 20-30 minutes
  5. For the butter beans mash, drain the butter beans and add to a pot. Add 1 tbsp of ghee, butter or EVOO, chicken stock, fresh thyme and lemon juice. Simmer for 5 minutes. Season with salt and pepper.
  6. Use a stick blender for a couple of minutes to make the butter beans into a delicious, creamy mash.
  7. Serve with some green vegetables of your choice.
