
This homemade granola is super easy to make and bakes in just 10 minutes! The hint of vanilla adds a touch of indulgence, making it a delicious way to start your day.

Ingredients:
- 60g gluten free porridge oats
- 30g sesame seeds
- 30g chia seeds
- 30g sunflower seeds
- 30g pumpkin seeds
- 80g cashew nuts
- 60g skin on almonds
- 40g almond flakes
- 2tbsp coconut oil
- 2 tbsp maple syrup
- 2 tbsp smooth almond butter
- 1 tbsp vanilla extract
- 1 tsp ground cinnamon
- 50g dried cranberries (optional)
- 50g walnut halves
- 2 tbsp linseeds/flax seeds
Steps:
- Pre-heat oven to 160 degrees (fan) or gas mark 3.
- Combine all the dry ingredients in a large bowl (except the cinnamon, cranberries (if using), walnuts and linseed/flax seeds.
- Melt the coconut oil, then add the maple syrup, vanilla, almond butter and cinnamon. Stir well to combine.
- Add this to the dry ingredients and mix well making sure all the mixture is covered.
- Spread on a lined baking tray and bake in the oven for 10 –12 mins.
- Allow to cool completely, add the cranberries, walnuts and linseeds/flax seeds. Mix to combine. Store in an airtight container for up to 2 weeks.
